Beer Cheese Dip for Pretzels

The perfect game day dip is here. This beer cheese dip is quick and easy to make. It makes a great dip for a variety of game day snacks. Soft pretzels and my sourdough pretzel bites pair wonderfully with this cheddar and smoked gouda cheese dip. It also makes a great dipping sauce for chips, corn dogs, fresh baked sourdough bread or rosemary sourdough bread and even hot wings.

Ingredients and Substitutions

The great thing about this dip is that you only need a few ingredients, many of which you probably already have.

Butter: I recommend unsalted butter as the cheese will add plenty of saltiness to this recipe. 

Flour: This recipe uses all purpose flour but you can substitute bread flour or even whole wheat flour if that is what you have on hand. 

Milk: You can use any kind of cow’s milk such as whole milk or skim milk. 

Beer: I recommend a lager or ale style of beer but you really can experiment with your favorite beers. I would avoid anything flavored as this will be noticeable in the final dip. A porter or stout beer will have a stronger flavor. I would avoid using an IPA as these will result in a rather strong flavored dip. 

Cheddar Cheese: I used medium cheddar cheese but you can also use sharp cheddar cheese if you like a little more bite to your cheese flavors. 

Smoked Gouda: You can also substitute regular gouda if you do not prefer a smoky flavor. 

Dijon Mustard: Feel free to substitute plain yellow mustard if desired. 

Garlic Powder

Onion Powder

Paprika: You can use regular paprika or substitute smoked paprika. 

How to Make Beer Cheese Dip

The process to make this beer cheese dip is simple. 

Step 1: Melt the butter in a medium saucepan over low heat. Add the flour and stir for 30 seconds, until thickened.

Step 2: Pour in the milk and beer. Stir for about 3-5 minutes. The liquid should thicken slightly. 

Step 3: Add in the shredded cheese, mustard and spices. Stir until completely mixed in and melted. Serve immediately.

How to Store

This beer cheese dip should be stored in the refrigerator for up to 3-5 days. You can cover the bowl with plastic wrap or store in an airtight container.

How to Serve Beer Cheese Dip

This dip can be served immediately or you can make it ahead. To make ahead, store the dip in refrigerator after preparing it. Reheat the dip on the stovetop to warm it or serve it cold. 

This cheddar and gouda dip pairs wonderfully with chips, soft sourdough pretzels or sourdough pretzel buns, homemade bread or breadsticks, or french fries.

Ingredients
  

  • 2 tablespoons unsalted butter
  • 2 tablespoons all purpose flour
  • ¾ cup milk
  • ¾ cup dark beer ale or lager
  • 8 ounces cheddar cheese shredded
  • 4 ounces smoked gouda shredded
  • 1 teaspoon dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika

Instructions
 

  • Melt the butter in a medium saucepan over low-medium heat. Stir in the flour for 30 seconds.
  • Add the milk and beer. Increase heat to medium. Stir for 3-5 minutes until slightly thickened.
  • Stir in the cheese, mustard and spices. Continue stirring a few more minutes until melted and thoroughly mixed.
  • Transfer to a serving bowl. Serve immediately.
