Easy Stuffed Dates with Peanut Butter and Chocolate
These delicious chocolate and peanut butter stuffed medjool dates are the perfect healthy sweet treat to satisfy your craving for a peanut butter cup. Plus, no baking is required!
12Medjool Dates, pittedIf your dates contain pits, split them on one side, lengthwise, with a knife and pull out the pit.
¼cupNatural Creamy Peanut Butter, Unsweetened
40gSemi-Sweet Dark ChocolateBroken into large chunks if using a chocolate bar.
1tbspHoney
Optional for Serving
¼tspFlaked Salt
1tbspChopped Dark Chocolate
Instructions
Line a 9x13 inch baking sheet with parchment paper.
Open the pitted dates so the two halves are connect lengthwise and lay them, with the inside of the dates facing up, on the baking sheet. Set aside.
In a small, microwave safe bowl, microwave the chocolate for 30 seconds. The chocolate will be partially melted.
Remove bowl from microwave and add the peanut butter. Give it a quick stir with a small rubber spatula or spoon, and return to the microwave. Microwave an additional 15 seconds.
Remove bowl from microwave and stir in the honey. All the chocolate should be melted. If not, return to the microwave for an additional 10 seconds.
Use a small spoon to divide the chocolate and peanut butter mixture into each date.
Sprinkle the dates with chopped chocolate and salt, if using.
Place the baking sheet in the refrigerator for 10 minutes to set the chocolate.
Remove the plate from the refrigerator and serve immediately or store in an air-tight container in the freezer for up to two months.
