Easy Stuffed Dates with Peanut Butter and Chocolate

Equipment

  • 1 microwave-safe bowl
  • 1 9x13 inch baking sheet
  • Parchment Paper
  • 1 small rubber spatula
  • 1 small spoon

Ingredients
  

  • 12 Medjool Dates, pitted If your dates contain pits, split them on one side, lengthwise, with a knife and pull out the pit.
  • ¼ cup Natural Creamy Peanut Butter, Unsweetened
  • 40 g Semi-Sweet Dark Chocolate Broken into large chunks if using a chocolate bar.
  • 1 tbsp Honey

Optional for Serving

  • ¼ tsp Flaked Salt
  • 1 tbsp Chopped Dark Chocolate

Instructions
 

  • Line a 9x13 inch baking sheet with parchment paper.
  • Open the pitted dates so the two halves are connect lengthwise and lay them, with the inside of the dates facing up, on the baking sheet. Set aside.

  • In a small, microwave safe bowl, microwave the chocolate for 30 seconds. The chocolate will be partially melted.

  • Remove bowl from microwave and add the peanut butter. Give it a quick stir with a small rubber spatula or spoon, and return to the microwave. Microwave an additional 15 seconds.

  • Remove bowl from microwave and stir in the honey. All the chocolate should be melted. If not, return to the microwave for an additional 10 seconds.

  • Use a small spoon to divide the chocolate and peanut butter mixture into each date.

  • Sprinkle the dates with chopped chocolate and salt, if using.

  • Place the baking sheet in the refrigerator for 10 minutes to set the chocolate.
